Be it the fitness conscious adults who stay away from buttery sponges or the candy craving kids who wait impatiently for their shares. There are a few musts for these yummy cakes that make up the centerpieces of our tables on Christmas. First, the cake sponge should be amply moist. It should never be dry and yet they should maintain a soft texture which is not too heavy. A combination of dry fruits and nuts like dark raisins, cherries and other berries, orange zest, and nuts only go on to make the cakes richer. But the standard is not the rule!
